Cornfields:
Mike RObinson's brillaint book on Quatre Bras explains how cornfields affected the battle. Also see Adkin's magisterial 'Waterloo Companion'.
Before it was trampled down it restricted visibility (which allowed French cavalry to take British infantry by surprise). On the whole though, I am not sure the effect of cornfields was major - apart from angry farmers and by executing a series of wheels a unit could make some interesting crop patterns.
Steep hills:
The steep hills at battles such as Bussaco, Maya, Roncesvalles, and Orthez were so steep and rocky that the attacking infantry were forced to either break up into Irregular formation or move in column of sub divisions up the winding paths. Obviously completely impassable to cavalry.
The Arapiles at Salamanca were surrounded by a sheer rocky cliff face which is impassable to cavalry and artillery in draught (and gave an advantage to defending infantry).
Given the windage of Napoleonic muskets and poor shooting skills of soldiers, I'd suggest that overhead shooting even on a steep hill would have been extremely risky for friendly troops in front!
We played a Peninsula game last week with steep Hills and a few cornfields ....
Corn fields ....bad terrain
Steep Hills ....Bad terrain for Cav ...Art fire over troops 4BW at enemy who must be more than 4BW away from your troops (Not cannister) all ranges reduced as well.
The game played well using a Core/ Organic and Reserve's
The Beauty about Lasalle is that you can tweak it in a few ways to create most aspects og Historical battles and still retain the gameplay and fun ....it was a 4 player game and lasted about 3 hours ....not bad for a pickup and play Napoleonic game (not many Napoleonic rulesets can achieve that!)
The scenario was that the French were pludering a Spanish Churh (the objective) 6BW from the centre line and the Brits hoping to liberate the Church
