Can I take 2 Eclaireurs in a Guard Cavalry 1813 Brigade ?

No, you may only take the units that are listed in the "Compositions."

Ok but "Eclaireurs" where part of Impérial Guards Cavalry in 1814 and they are listed in no other brigades except if I don't find them ?

I believe they are not a unit which can be used in the standard army builder. The Prussian lancers as another example of such a unit. Sam added them as a guide to their capabilities only.
Of course you can use then in your own scenarios, or in games where your you and your opponent agree to use them (as substitutes or whatever). However, they are not part of the 'standard' army builder brigades, which cover the forces at a generic vs. specific level.
IMO you could also use the figs with another profile from the army builder, if you wanted - say the Guard Cav. Just a thought.
