What things do I need to tell my opponent about my army before the set up procedure.
I presume I will tell him my Theatre and Nation.
Should I tell him exactly what support choice(s) I have taken (so effectively also if I have reinforcements)? Or do I only tell him what troops I have when I deploy them - so if I don't deploy a support choice on the table at set up it must be a reserve support, but until they arrive he won't know which choice I took?

I would leave those details up to tournament organizers.
It has been my experience that the organizers request a written summary of each player's army, sent by email a couple of weeks in advance, and that those are then made available when you meet your foe across the field for the first time. He sees your list and you see his. (If I were running a tourney, that's how I'd do it.)
If it's just a friendly game at the club with your regular mates... then I'm sure you can work that out.

As a comp organiser I'd have players 'register' as Nationality, Theatre and Division, and that's all the info you get until the lead hits the table.
Players would have to register their support Brigades with the umpire before the first game. (and probably also make a choice for those few troops that have an option for different classifications)
I'd also be tempted to allow players some choice of brigades, if you're playing a comp with one brigade armies, allow players to register with two and choose one (secretly write it down) after learing their opponent's info as above.
I suppose for a pick up game you'd agree what to tell before you start the game.
